Mashed avocado and roasted garlic seasoned with lemon juice, parsely, oregano, salt and pepper. Chill before serving.
Ingredients -
1 pound California Avocados, pitted and flesh removed from peels
1/8 cups Fresh Lemon Juice
1-1/3 Roasted Garlic Heads
1/2 teaspoon chopped Garlic
1/12 cups chopped Parsley
1 teaspoon Dried Oregano
1/2 teaspoon Salt
1 pinch coarsely Ground Black Pepper
Preparation:
1. In medium bowl, roughly mash avocado with fork.
2. Fold lemon juice, garlic, parsley, dried oregano, salt and pepper into avocado.
3. Chill 1 hour.

Roasted Garlic Heads
Preheat oven to 375 F. Leave cloves intact while peeling outer skin away from head of garlic. Place garlic head on foil. Drizzle with olive oil. Fold up foil around garlic. Bake 1 hour. Allow cooling. Squeeze garlic head to release roasted garlic. Discard skin.
