Asparagus Au Gratin

Au gratin casserole consists of Layers of asparagus with a butter, Parmesan cheese, bread crumb, and cashew sauce.
Ingredients -
2 tablespoon Butter
1 teaspoon Salt
2 tablespoon Flour
2 cups Milk
1 cup Grated Fresh Parmesan
1 1/2 cups toasted Bread Crumbs
1 cup Cashews, toasted
2 cups Asparagus tips
 
Preparation:

1. Preheat oven to 350 F.

2. Melt butter in saucepan over low heat.

3. Stir in salt and flour.

4. Cook 4 minutes. Gradually stir in milk.

5. Add grated fresh Parmesan cheese. Stir occasionally and cook until thickened.

6. Remove saucepan from heat.

7. Add toasted breadcrumbs and cashews to small bowl and stir to combine. Reserve 2 tablespoons.

8. Butter casserole dish.

9. Place layer of asparagus, then a layer of toasted bread crumb mixture in casserole dish.

10. Spoon a layer of sauce over asparagus.

11. Repeat the layers, ending with the reserved crumbs.

12. Bake 25 minutes, or until top is browned.

Fat and cholesterol free, asparagus is nutrient rich. Asparagus is high in vitamins A, B6, and C.

Cooking Tip
Grated Fresh Parmesan
For best results buy fresh Parmesan cheese and grate nice chunks. Imitation cheeses should not be used in this recipe. The taste and texture just don't hold up.
